Ostrich & beef bolognaise sauce

Ingredients
- 6 sprigs basil
- 1 tbsp tomato paste
- large pinch salt
- black pepper to taste
- 200 ml homemade beef stock or free range chicken stock
- 800 g tinned tomatoes, chopped
- a few sprigs thyme
- 250 g lean beef mince
- 400 g ostrich mince
- 200 g carrot, finely chopped
- 200 g celery, finely chopped
- 2 garlic cloves, crushed
- 1 onion, finely chopped
- 2 tbsp olive oil

Cooking Instructions
- Place a pot on the stove on a medium heat. Add oil and allow to heat up then add the onions, carrots, celery and garlic.
- Cook the vegetables for 5-8 minutes until soft, then add the beef and ostrich mince stirring to break down any lumps. Brown the mince for at least 10 minutes.
- Add tomato paste and cook for 3 minutes then add whole peeled tomatoes and stock.
- Simmer the sauce until a thick sauce, then add the basil and check the seasoning.
- Serve immediately or cool down and freeze for later use.
