Ostrich & beef bolognaise sauce

Cook's Tips:Chopped mushrooms can also be added for variation.

Ingredients

  • 6 sprigs basil
  • 1 tbsp tomato paste
  • large pinch salt
  • black pepper to taste
  • 200 ml homemade beef stock or free range chicken stock
  • 800 g tinned tomatoes, chopped
  • a few sprigs thyme
  • 250 g lean beef mince
  • 400 g ostrich mince
  • 200 g carrot, finely chopped
  • 200 g celery, finely chopped
  • 2 garlic cloves, crushed
  • 1 onion, finely chopped
  • 2 tbsp olive oil

Cooking Instructions

  1. Place a pot on the stove on a medium heat.  Add oil and allow to heat up then add the onions, carrots, celery and garlic.
  2. Cook the vegetables for 5-8 minutes until soft, then add the beef and ostrich mince stirring to break down any lumps.  Brown the mince for at least 10 minutes. 
  3. Add tomato paste and cook for 3 minutes then add whole peeled tomatoes and stock. 
  4. Simmer the sauce until a thick sauce, then add the basil and check the seasoning.
  5. Serve immediately or cool down and freeze for later use.
