Easy crowd-pleasing tiramisu

Sweet and delightful – this tiramisu ticks all the boxes!

Ingredients

  • 2 packs Bakers Original Boudoir Biscuits
  • 2 x 250 g tubs Woolworths Mascarpone
  • 250 ml Woolworths Whipping Cream
  • 4 – 6 to make 2 cups of Woolworths WCafe Continental Espresso Blend Coffee Capsules
  • 4 T Woolworths Castor Sugar
  • Woolworths Vanilla Extract
  • Woolworths Unsweetened Cocoa Powder, for dusting

Cooking Instructions

  1. Simmer the espresso and 3 T of castor sugar together to reduce slightly and to create a slight syrup, about 3–5 minutes. Allow to cool completely. 
  2. Bring your tubs of mascarpone to room temperature, this ensures they are easier to work with and you do not run the risk of over beating it which can sometimes cause it to become grainy and split.
  3. Gently combine the cream, 1 T castor sugar and vanilla with the mascarpone until incorporated and silky smooth. 
  4. When ready to assemble, dip the biscuits in your coffee syrup and arrange in a single layer at the bottom of your dish. 
  5. Spread over a layer of vanilla mascarpone and repeat with another layer of biscuits and mascarpone, finish off with a generous dusting of cocoa powder and allow to set in the fridge for 4–6 hours. 
  6. When ready to serve, dish up liberal spoonfuls and finish off with any remaining coffee syrup!
