Crispy sweet potato wedges

Ingredients
- olive oil
- 1/4 tsp sweet paprika
- large pinch pepper
- large pinch salt
- 3 sweet potatoes, large

Cooking Instructions
- Cut the sweet potatoes into skinny 2cm thick wedges, about 5cm long.
- Place potatoes wedges in a pot with a good pinch of salt and bring to the boil. Allow to boil for 8 minutes. Remove the sweet potatoes from the pot and allow them to steam dry.
- Place in a large roasting tray in a single layer and add the olive oil and seasoning.
- Place in a preheated oven at 200°C for about 30 minutes and bake until golden and crispy.
- Place on a platter and serve with the guacamole.
