Crispy sweet potato wedges

Ingredients

  • olive oil
  • 1/4 tsp sweet paprika
  • large pinch pepper
  • large pinch salt
  • 3 sweet potatoes, large

Cooking Instructions

  1. Cut the sweet potatoes into skinny 2cm thick wedges, about 5cm long.
  2. Place potatoes wedges in a pot with a good pinch of salt and bring to the boil. Allow to boil for 8 minutes.  Remove the sweet potatoes from the pot and allow them to steam dry.
  3. Place in a large roasting tray in a single layer and add the olive oil and seasoning.
  4. Place in a preheated oven at 200°C for about 30 minutes and bake until golden and crispy.
  5. Place on a platter and serve with the guacamole.
