Date & coconut crusted dark chocolate

Ingredients

  • Cook 'n Bake Original Non-Stick Cooking Spray
  • 200 g mixed seasonal berries
  • 3 eggs
  • 550 ml low fat milk
  • 400 g 80% dark chocolate
  • 1/2 cup coconut
  • 100 g dates

Cooking Instructions

  1. Place the dates in a food processor and blend until smooth, and paste-like.  Add the coconut and blend for 30 sec until combined.
  2. Remove date mixture from the blender and line the base of a 20cm tart tin.  Place in the fridge until needed.
  3. Chop your dark chocolate very fine.
  4. Place the milk in a pot in on the stove and bring to the boil, then pour over dark chopped chocolate and let it melt.  Allow the chocolate milk to cool.
  5. Whisk your eggs and add slowly to chocolate mixture, mixing well after each addition. 
  6. Take tart tin out of the fridge and pour dark chocolate mixture into it.
  7. Bake in the oven on 155°C for 30 minutes. 
  8. Check tart after 25 minutes.
  9. Remove from the tin and decorate with fresh berries just before serving.
