Crispy beef mince
Ingredients
- 4 crispy fried eggs
- 3 spring onions, chopped
- 3 cups cooked rice
- fresh coriander, roughly chopped
- 1 cup sweet chilli sauce
- 4 tbsp soy sauce
- 1 red chilli, finely chopped
- 1/4 tsp ginger, grated
- 4 garlic cloves, finely chopped
- 400 g Woolworths lean mince
- 2 tbsp canola oil

Cooking Instructions
- Heat the oil over a high heat. Break the mince into small pieces and add to the pan to cook for 3 minutes or until crisp before turning over and crisping the other side.
- Add the garlic, ginger, chilli and soy sauce along with the sweet chilli sauce. Stir-fry together for a minute before adding the coriander and rice and stirring into the mix. Once mixed through allow the rice to crisp slightly before adding the spring onions and tossing through.
- Divide the mixture into 4 serving bowls before topping with a crispy fried egg and serving.
