Crispy beef mince

Ingredients

  • 4 crispy fried eggs
  • 3 spring onions, chopped
  • 3 cups cooked rice
  • fresh coriander, roughly chopped
  • 1 cup sweet chilli sauce
  • 4 tbsp soy sauce
  • 1 red chilli, finely chopped
  • 1/4 tsp ginger, grated
  • 4 garlic cloves, finely chopped
  • 400 g Woolworths lean mince
  • 2 tbsp canola oil

Cooking Instructions

  1. Heat the oil over a high heat. Break the mince into small pieces and add to the pan to cook for 3 minutes or until crisp before turning over and crisping the other side.
  2. Add the garlic, ginger, chilli and soy sauce along with the sweet chilli sauce. Stir-fry together for a minute before adding the coriander and rice and stirring into the mix. Once mixed through allow the rice to crisp slightly before adding the spring onions and tossing through.
  3. Divide the mixture into 4 serving bowls before topping with a crispy fried egg and serving.
