Ingredients

  • 2 onions, cut into rough chunks
  • 2 carrots, cut into rough chunks
  • 2 stalks of celery, cut into chunks
  • 8 bay leaves
  • A small handful of peppercorns
  • 5kg Bone-in Beech-smoked Gammon
  • 130g Whole Chipotle Chillies in Adobo Sauce
  • The juice of 2 x 440 g pineapple tins, with the rings reserved to garnish
  • 3 stalks of spring onion
  • 100g whole glacé cherries

Kitchen Craft Episode 43: Gammon with Chipotle and Pineapple - Chef Clem really knows how to get the best out of a gammon

The secret to making a great gammon, as Chef Clem well knows, is just to leave enough time for it to cook slowly. The prep time is actually not such a big deal – as you’ll see when you try this fabulous gammon with chipotle and pineapple. Enjoy!

  1. To a very large pot, add the onions, carrots, celery, bay leaves and peppercorns. If your gammon was frozen ensure its completely thawed before adding it to the pot. Top with enough water to cover all the ingredients. 
  2. Cook the gammon in the pot over medium heat on the stove – it will need to cook 30 minutes for every 500 g, just simmering over medium heat. 
  3. Preheat your oven to 200°C. 
  4. Once cooked, remove the gammon from the pot and cool until it can be handled without burning your hands and fingers. Carefully separate the skin from the fat cap. Score the fat in a diamond pattern with a sharp knife. Place the gammon in the oven to begin rendering out the fat and browning it. 
  5. While the gammon is in the oven, prepare your glaze by combining the chipotle, pineapple syrup and spring onions. Blend until smooth. 
  6. Remove the gammon from the oven and pour over half the glaze. Be sure that every inch of the gammon, especially the fat, is covered. Return to the oven for 10 minutes or until the glaze has reduced. Remove from the oven, coat in another layer of the glaze and repeat the process to reduce for a further 10 minutes in the oven. 
  7. With your gammon well glazed, place the pineapple rings onto the gammon. Fill the centres of the rings with the cherries. Return to the oven and grill for 15 minutes. 
  8. Remove from the oven and cool slightly before carving and serving.
