Flavourburst nectarine flatbread

Ingredients
- 5 quartered Flavourburst nectarines, pips removed
- 1 small bunch fresh thyme sprigs, leaves only
- 100 g crumbled blue cheese
- 4 sprigs fresh thyme
- 3 Tbsp butter
- 350 ml water, lukewarm
- 1/4 tsp salt
- 150 g sugar for the egg whites
- 25 g yeast
- 500 g flour, plus extra for dusting

Cooking Instructions
1. Mix together flour, yeast, sugar and salt.
2. Make a well in the center and add enough lukewarm water to make soft dough, approx. 350ml. Mix to combine and knead for 10 minutes until smooth.
3. Turn into an oiled bowl, cover and leave to prove for approx. 45 minutes.
4. Once dough has proved to double the size, add butter and thyme and knead until all the butter is incorporated into the dough.
5. Use a rolling pin to roll it out to a 2cm thick oval. Place on a baking tray and top with blue cheese, thyme sprigs and nectarines.
6. Cover and leave to prove for another 40 minutes.
7. Bake at 180 degrees for approx. 25 minutes until golden.
