Tamarind grilled hake

Ingredients

  • Cauliflower rice
  • 4 x 180 g Fresh hake fillets
  • 4 Tbsp Fynbos honey
  • 1/2 cup Blue Elephant Tamarind Dressing
  • 300 g asparagus
  • fresh coriander, to garnish
  • fresh mint, to serve
  • 4 tsp fresh ginger, grated
  • 1 Tbsp chilli sauce
  • 1 lemongrass stalks, roughly chopped

Cooking Instructions

  1. Preheat grill.
  2. Mix the tamarind dressing, lemongrass, chilli sauce (Sriracha), ginger, honey and mint together in a small bowl.
  3. Place the salmon on a greased piece of foil and brush a thick layer of the sauce over the fish.
  4. Grill for 10 minutes until the sauce has caramelized.
  5. Serve sprinkled with the chopped coriander and a bowl of extra sauce on the side for dipping.
  6. Serve with cauliflower rice and grilled asparagus.
