Caramelised salmon

Ingredients
- Woolworths crunchy Asian slaw salad
- Lemon, to serve
- 1 cup Extremely creamy mayonnaise
- 6 Norwegian salmon portions
- Super sour Sriracha hot chilli sauce
- olive oil
- black pepper
- 1 Tbsp sea salt, plus extra to taste
- 2 tsp white sugar

Cooking Instructions
- Combine the sugar, salt and black pepper in a shallow bowl.
- Dip each salmon piece into the bowl and coat the entire surface of the salmon with the mixture.
- Heat just enough olive oil to coat the base of a large non-stick frying pan over a medium heat. When the oil is hot, add the salmon pieces, skin side down, and sauté for about 3 minutes.
- Turn each salmon portion over, taking care not to damage the skin, and sauté for another 2 – 3 minutes until sealed but still pink in the middle.
- Combine the mayonnaise and the sriracha sauce and mix until well combined.
- To serve, place a salmon portion on each plate with a spoonful of Sriracha mayonnaise and Asian Slaw or Summer Salad on the side and lemon wedges.
