Caramelised salmon

Cook's Tips:Mix the Asian Slaw with the Sriracha mayonnaise.

Ingredients

  • Woolworths crunchy Asian slaw salad
  • Lemon, to serve
  • 1 cup Extremely creamy mayonnaise
  • 6 Norwegian salmon portions
  • Super sour Sriracha hot chilli sauce
  • olive oil
  • black pepper
  • 1 Tbsp sea salt, plus extra to taste
  • 2 tsp white sugar

Cooking Instructions

  1. Combine the sugar, salt and black pepper in a shallow bowl.
  2. Dip each salmon piece into the bowl and coat the entire surface of the salmon with the mixture.
  3. Heat just enough olive oil to coat the base of a large non-stick frying pan over a medium heat. When the oil is hot, add the salmon pieces, skin side down, and sauté for about 3 minutes.
  4. Turn each salmon portion over, taking care not to damage the skin, and sauté for another 2 – 3 minutes until sealed but still pink in the middle.
  5. Combine the mayonnaise and the sriracha sauce and mix until well combined.
  6. To serve, place a salmon portion on each plate with a spoonful of Sriracha mayonnaise and Asian Slaw or Summer Salad on the side and lemon wedges.
