Pan fried salmon with dill dressing

Cook's Tips: | Always leave the skin on the salmon and cook that side a bit longer. The crispy skin is delicious. When cooking fish always cook the presentation side down first (opposite to the skin side). |

Ingredients
- 2 x 250 g tubs crème fraîche
- 4 Tbsp mayonnaise
- 1/2 tbls dill, finely chopped
- 1/4 lemon, juiced, plus 2 extra lemons, cut into wedges
- freshly ground black pepper, to taste
- sea salt, to taste
- 4 portions of fresh salmon fillet (150g – 200g each)
- 75 ml Extra virgin olive oil

Cooking Instructions
- To make the dressing, mix the creme fraiche, mayonnaise, dill and lemon juice, and season to taste with the black pepper and salt.
- To cook your salmon, simply rub the fillet with olive oil and pan fry on both sides until golden and cooked through to your preference.
- Serve with the fresh lemon wedges and dressing on the side.
