Pan fried salmon with dill dressing

Cook's Tips:Always leave the skin on the salmon and cook that side a bit longer. The crispy skin is delicious. When cooking fish always cook the presentation side down first (opposite to the skin side).
Serving Suggestion:The flavours of this dressing develops with time, so if possible make it in advance.

Ingredients

  • 2 x 250 g tubs crème fraîche
  • 4 Tbsp mayonnaise
  • 1/2 tbls dill, finely chopped
  • 1/4 lemon, juiced, plus 2 extra lemons, cut into wedges
  • freshly ground black pepper, to taste
  • sea salt, to taste
  • 4 portions of fresh salmon fillet (150g – 200g each)
  • 75 ml Extra virgin olive oil

Cooking Instructions

  1. To make the dressing, mix the creme fraiche, mayonnaise, dill and lemon juice, and season to taste with the black pepper and salt.
  2. To cook your salmon, simply rub the fillet with olive oil and pan fry on both sides until golden and cooked through to your preference.
  3. Serve with the fresh lemon wedges and dressing on the side.
