Pan-Fried Prawns

Ingredients

  • 3 Tbsp olive oil, to drizzle
  • 1 x 10 cm piece ginger piece, peeled and roughly chopped
  • 6 cloves garlic, grated
  • 4-6 red chillies, grated
  • 3 ripe tomatoes, diced
  • 800 g large prawns ( with shell, cleaned)
  • 4 Tbsp sunflower oil
  • a pinch of sea salt, crushed, plus extra for topping

Cooking Instructions

  1. In a saucepan pan over a medium heat, fry the ginger, garlic and chillies in the olive oil until fragrant, then add the tomatoes and sea salt. Simmer for 15 minutes.
  2. Meanwhile, place a large pan on a high heat and add the sunflower oil.
  3. When hot, sear the prawns in batches for 1 minute on each side or until plump and coral in colour.
  4. Serve with chilli tomato sauce.
