Sassi green-listed yellowtail crudo

Serves:4

Ingredients

  • 3 medium shallots, sliced into rings
  • 4 patty pans
  • black pepper
  • olive oil, to drizzle
  • 1 finely sliced red chilli, finely chopped
  • olive oil, to drizzle
  • 1 lemon, cut into 8 slices
  • To serve fresh mint leaves
  • 2 cups baby marrows, grated
  • 450 g fillet yellowtail

Cooking Instructions

  1. Using a mandolin, thinly slice the baby marrow, patty pans and onions or shallots.
  2. Thinly slice the fresh yellowtail fillet and place a thin layer on a serving plate.
  3. Scatter the baby marrow, patty pans and shallots over the yellowtail fish. Followed by the mint leaves and chilli. 
  4. Finish off with a squeeze of lemon juice, a drizzle of olive oil and freshly ground black pepper.
