Sassi green-listed yellowtail crudo

Ingredients
- 3 medium shallots, sliced into rings
- 4 patty pans
- black pepper
- olive oil, to drizzle
- 1 finely sliced red chilli, finely chopped
- olive oil, to drizzle
- 1 lemon, cut into 8 slices
- To serve fresh mint leaves
- 2 cups baby marrows, grated
- 450 g fillet yellowtail

Cooking Instructions
- Using a mandolin, thinly slice the baby marrow, patty pans and onions or shallots.
- Thinly slice the fresh yellowtail fillet and place a thin layer on a serving plate.
- Scatter the baby marrow, patty pans and shallots over the yellowtail fish. Followed by the mint leaves and chilli.
- Finish off with a squeeze of lemon juice, a drizzle of olive oil and freshly ground black pepper.
