  • 250 g Ricotta cheese
  • 1/4 cup honey
  • 2 tbsp balsamic vinegar
  • Sea salt and freshly ground black pepper
  • a small handful fresh mint, roughly chopped
  • 1 cup fresh plums, diced finely
  • 1/4 cup extra virgin olive oil
  • 8 thick slices Pain au levain pecan nut and raisin bread
