Asian Salmon en Papilotte

Ingredients

  • 4x200g boneless salmon fillet
  • 2, julienned, carrots, cooked until soft
  • 5 Spring onions, sliced julienne
  • 2 finely sliced garlic clove, finely chopped
  • 1x3cm piece, julienned, fresh ginger
  • 3 Tbsp soy sauce
  • 2 tbsp fish sauce
  • the juice of 2 small limes
  • 2 fresh chillies, chopped
  • micro greens, to garnish

Cooking Instructions

  1. Pre-heat the oven to 180°c.
  2. Cut 4 large squares of baking paper (approximately 40cmx30cm) and set aside.
  3. Divide the carrots and spring onions between the squares of paper, placing the vegetables in the centre of each piece
  4. Place the salmon on top of the vegetables then top with the garlic, ginger, soy and fish sauce and lime juice.
  5. Fold the edges of the paper together to seal each parcel.
  6. Place the parcels on a baking tray and place in the oven.
  7. Allow to bake for 10-12 minutes or until the salmon is cooked to your preference.
  8. Remove from the oven then serve with fresh chillies, micro greens and steamed rice.
