Asian Salmon en Papilotte

Ingredients
- 4x200g boneless salmon fillet
- 2, julienned, carrots, cooked until soft
- 5 Spring onions, sliced julienne
- 2 finely sliced garlic clove, finely chopped
- 1x3cm piece, julienned, fresh ginger
- 3 Tbsp soy sauce
- 2 tbsp fish sauce
- the juice of 2 small limes
- 2 fresh chillies, chopped
- micro greens, to garnish

Cooking Instructions
- Pre-heat the oven to 180°c.
- Cut 4 large squares of baking paper (approximately 40cmx30cm) and set aside.
- Divide the carrots and spring onions between the squares of paper, placing the vegetables in the centre of each piece
- Place the salmon on top of the vegetables then top with the garlic, ginger, soy and fish sauce and lime juice.
- Fold the edges of the paper together to seal each parcel.
- Place the parcels on a baking tray and place in the oven.
- Allow to bake for 10-12 minutes or until the salmon is cooked to your preference.
- Remove from the oven then serve with fresh chillies, micro greens and steamed rice.
