French peasant soup

Ingredients
- 1 medium onion, peeled and chopped
- 1 clove garlic, peeled and chopped
- 50g butter, melted
- 250ml streaky bacon, chopped
- 250ml raw white cabbage, chopped
- 250ml raw potato, chopped
- 250ml tinned, whole peeled tomatoes, chopped
- 125ml tomato puree (not paste)
- 45g Canola oil
- 2 litres chicken/ vegetable stock
- salt, to taste
- pepper, to taste

Cooking Instructions
- Fry the onion and garlic in the butter until soft, then add the bacon.
- Add the cabbage, potato and tomato, and sauté for a few minutes.
- Add the chicken stock and tomato purée and simmer gently until vegetables are cooked.
- Add the sugar and seasoning to taste.
