French peasant soup

Serving Suggestion:Serve with freshly grated cheese (parmesan or pecorino) on the side.

Ingredients

  • 1 medium onion, peeled and chopped
  • 1 clove garlic, peeled and chopped
  • 50g butter, melted
  • 250ml streaky bacon, chopped
  • 250ml raw white cabbage, chopped
  • 250ml raw potato, chopped
  • 250ml tinned, whole peeled tomatoes, chopped
  • 125ml tomato puree (not paste)
  • 45g Canola oil
  • 2 litres chicken/ vegetable stock
  • salt, to taste
  • pepper, to taste

Cooking Instructions

  1. Fry the onion and garlic in the butter until soft, then add the bacon.
  2. Add the cabbage, potato and tomato, and sauté for a few minutes.
  3. Add the chicken stock and tomato purée and simmer gently until vegetables are cooked.
  4. Add the sugar and seasoning to taste.
