Coconut-and-ginger pork mince

Ingredients

  • 200 g cooked rice noodles
  • to serve Sriracha sauce
  • fresh coconut, shaved
  • 3 tbsp fish sauce
  • sea salt and freshly ground pepper, to taste
  • 400 ml coconut milk
  • 500 g pork mince
  • 2 cloves garlic, chopped
  • 1/4 tsp ginger, grated
  • 2 Tbsp Coconut oil, plus extra for greasing
  • 1 small red onion, finely chopped

Cooking Instructions

  1. Soften the onion in the oil for 5 minutes over a low heat, then add the ginger and garlic and cook for a further minute. 
  2. Increase the heat, add the mince and brown. Fold in the coconut milk and reduce lightly.
  3. Season and add the fish sauce. Serve with the sriracha, coconut and noodles.
