Coconut-and-ginger pork mince

Ingredients
- 200 g cooked rice noodles
- to serve Sriracha sauce
- fresh coconut, shaved
- 3 tbsp fish sauce
- sea salt and freshly ground pepper, to taste
- 400 ml coconut milk
- 500 g pork mince
- 2 cloves garlic, chopped
- 1/4 tsp ginger, grated
- 2 Tbsp Coconut oil, plus extra for greasing
- 1 small red onion, finely chopped

Cooking Instructions
- Soften the onion in the oil for 5 minutes over a low heat, then add the ginger and garlic and cook for a further minute.
- Increase the heat, add the mince and brown. Fold in the coconut milk and reduce lightly.
- Season and add the fish sauce. Serve with the sriracha, coconut and noodles.
