Boxing day ramen noodles

Ingredients

  • a large handful coriander
  • 2 fresh chillies,sliced
  • 250 g Easy to Wok Fresh Egg Noodles, cooked
  • 400 ml Coconut milk
  • 4 1/2 cups good-quality chicken stock
  • 1 x 80 g sachet thai red curry paste
  • 150 g exotic mushrooms
  • olive oil
  • 300 - 400 g Pork belly

Cooking Instructions

  1. Pan-fry the pork in 1 T olive oil until slightly browned on both sides and warmed through. Remove from the pan and set aside.
  2. Add 1 T olive oil to the same pan, slice the mushrooms and fry until golden, then remove from the pan.
  3. Pan-fry the curry paste in the remaining olive oil for 3 minutes, then add the stock and coconut milk and simmer gently for 20 minutes.
  4. Just before serving, place the noodles and pork into bowls. Top with the spring onion, chillies, mushrooms and a few sprigs of fresh coriander.
