Corn Dogs with Spicy Tomato Relish

Ingredients

  • salt and pepper
  • Handful chopped parsley
  • 2 tbsp sugar
  • 1 tin chopped tomatoes
  • 1 tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1 onion, chopped
  • 2 tbsp olive oil
  • 8 Woolworths Bockwurst sausages
  • wooden skewers
  • 1 cup milk (may need more or less)
  • 1 egg
  • 2 tbsp butter, melted
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 tbsp sugar
  • 2/3 cups polenta
  • 1 cup cake flour
  • Oil, for frying

Cooking Instructions

  1. For the corndogs, fill a wide, pan with 4cm depth of vegetable oil.
  2. Combine the flour, polenta, sugar, salt and baking powder.
  3. Mix together butter and egg then add to the dry ingredients.
  4. Mix in enough milk to form a thick batter.
  5. Skewer the Bockwurst onto the sticks then dip into the batter to coat.
  6. Cook in hot oil until golden brown.
  7. Make the relish by heating oil then add onions and sauté until soft.
  8. Add the paprika, cayenne, tomatoes and sugar.
  9. Simmer gently until the sauce is thickened then stir in the parsley and season to taste.
