Festive Gammon Sides

Ingredients

  • 100 g toasted flaked almonds
  • 600 g tenderstem broccoli
  • salt and pepper
  • 1 tsp sugar
  • 1/4 cup olive oil
  • Handful chopped parsley
  • Juice of 1 orange
  • 2 tsp wholegrain mustard
  • 3 tbsp olive oil
  • salt and pepper
  • 1 garlic bulb, broken into cloves (unpeeled)
  • fresh thyme sprigs
  • 1/2 tsp cayenne pepper
  • 2 tsp garam masala
  • 2 pears, cut into wedges
  • 1 medium butternut, cut into wedges

Cooking Instructions

To make the Steamed tenderstem broccoli with orange dressing:

  1. Steam or blanch the 600g tenderstem broccoli until bright green and tender.
  2. Meanwhile, make the dressing by whisking together all of the ingredients (2 tsp wholegrain mustard, juice of 1 orange, handful chopped parsley, Â¼ cup olive oil, 1 tsp sugar, salt and pepper.
  3. Pour the dressing onto the broccoli and toss well before arranging on a platter.
  4. Sprinkle on the100 g toasted almonds.

To make the Spiced roast butternut and pears:

  1. Preheat oven to 200C
  2. Place 1 medium butternut and pears cut into wedges into a roasting dish.
  3. Sprinkle with 2 tsp garam masala, 1/2 tsp cayenne pepper, fresh thyme sprigs, 1 garlic bulb, broken into cloves(unpeeled),  salt, pepper and 3 tbsp olive oil, then toss well to coat.
  4. Place into the oven and roast until the butternut is tender and golden brown.
