Orange honey poached nectarines

Ingredients
- 1 Orange, zested
- 1/4 cup orange blossom honey
- 1 cup orange juice
- 1 cup water
- 4 ripe nectarines, halved and pitted
- 1/2 vanilla pod, split
- 2 cups milk
- 4 large egg yolks
- 1 tsp cornflour
- 1/4 castor sugar

Cooking Instructions
- Place the orange zest, juice, honey and water into a pot, then bring to the boil.
- Add the nectarines, then simmer gently, with a lid on for 15 minutes or until the fruit is tender.
- Remove the fruit from the pot, then simmer the liquid until reduced by half before pouring over the fruit and setting aside to cool.
- Place the vanilla pod and milk into a pot, then bring to a simmer.
- Whisk together the egg yolks, cornflour and sugar.
- Pour the hot milk onto the eggs, while whisking.
- Return the mixture to the pot, then stir with a wooden spoon over gentle heat until mixture thickens and coats the back of a spoon.
- Pour through a sieve then chill or serve immediately.
- Serve the poached fruit drizzled with a generous helping of custard, and a sprinkling of crushed biscuits.
