Orange honey poached nectarines

Ingredients

  • 1 Orange, zested
  • 1/4 cup orange blossom honey
  • 1 cup orange juice
  • 1 cup water
  • 4 ripe nectarines, halved and pitted
  • 1/2 vanilla pod, split
  • 2 cups milk
  • 4 large egg yolks
  • 1 tsp cornflour
  • 1/4 castor sugar

Cooking Instructions

  1. Place the orange zest, juice, honey and water into a pot, then bring to the boil.
  2. Add the nectarines, then simmer gently, with a lid on for 15 minutes or until the fruit is tender.
  3. Remove the fruit from the pot, then simmer the liquid until reduced by half before pouring over the fruit and setting aside to cool.
  4. Place the vanilla pod and milk into a pot, then bring to a simmer.
  5. Whisk together the egg yolks, cornflour and sugar.
  6. Pour the hot milk onto the eggs, while whisking.
  7. Return the mixture to the pot, then stir with a wooden spoon over gentle heat until mixture thickens and coats the back of a spoon.
  8. Pour through a sieve then chill or serve immediately.
  9. Serve the poached fruit drizzled with a generous helping of custard, and a sprinkling of crushed biscuits.
