Mixed berry eton mess

Ingredients

  • 600 g Mixed Berries Salad
  • 1 punnet Fresh mint
  • 6Pk:3 Macaron Selection
  • 190 g Marshmallow Frosting Mix
  • 1 tsp Vanilla extract
  • 12/3 cups Fresh Cream
  • 1 Fresh lemon juice
  • 11/2 cup Sugar
  • Sabrosa Strawberry

Cooking Instructions

  1. Pour one punnet of the mixed berries and the punnet sobrosa strawberries, 1 cup of sugar, and the lemon juice into a medium sauce pan. Crush the berries lightly with a fork and bring the mixture to a full boil over medium-high heat. Lower the heat and simmer for 10 minutes, stirring occasionally, until the mixture is syrupy. Fold the remaining berries into the hot mixture and refrigerate until very cold.
  2. In the bowl of an electric mixer fitted with the whisk attachment, beat the cream, the remaining 3 tablespoons of sugar, and the vanilla together on medium-high speed until it forms firm peaks and set aside
  3. Follow the instruction of the marshmallow frosting, whip and set aside
  4. In decorative glassware layer a spoonful of the whipped cream, a spoonful of the berry compote, and then a few broken macaron pieces and lastly a spoon of the marshmallow frosting.
  5. Repeat once or twice, depending on the size of the glasses, until the glasses are full, add a dollop of marshmallow frosting.
  6. Brulee the frosting and garnish with fresh berries and mint.
