Deli style Focaccia platter

Ingredients

  • enough extra virgin olive oil to form a chunky sauce
  • 4 tbsp red wine vinegar
  • salt and freshly ground black pepper, to taste
  • 3 tbsp basil, roughly chopped
  • 1 tbsp mint, finely chopped
  • 5 tbsp parsley, chopped
  • 5 anchovies, finely chopped
  • 2 garlic, roughly chopped
  • 95 g olive duo, roughly chopped
  • extra virgin olive oil, to drizzle
  • 150 g fresh Bocconcini mozzarella
  • 100 g chargrilled marinated artichokes
  • 70 g Prosciutto crudo
  • 2 x 125 g smoked & roasted gammon
  • 6 tbsp Woolworths tomato chilli jam
  • 1 kg bread dough
  • semolina to line the oven tray

Cooking Instructions

  1. Grease a large oven tray before coating with the semolina. Stretch the dough to fit in the tray.
  2. Top the dough with the tomato chutney before adding the toppings, allow the dough to rest for 30 minutes to rise.
  3. Drizzle the olive oil over before placing in the oven to cook for 30-40 minutes at 180 or until the dough is perfectly cooked and the toppings are slightly charred.
  4. Spoon over some of the herbed olive dressing and serve immediately.
