Brown sugar and cinnamon apples

Ingredients

  • 4 tbsp unsalted butter, cut into small pieces
  • 1/2 cup brown sugar, packed
  • 1 cup Double cream
  • 6 tbsp maple syrup
  • 1/4 tsp ground nutmeg
  • 1 cinnamon stick
  • 1 large golden delicious apples

Cooking Instructions

  1. Preheat the oven to 180°C.
  2. Peel the skin off the top quarter of each apple and using a melon baller, scoop out the core, leaving the bottom intact.
  3. Stand the apples upright in a 33 x 23 x 5 cm baking pan.
  4. Mix the sugar and spices in a bowl. Reserve 2 tablespoons of the mixture.
  5. Fill the apple cavities with the remaining sugar mixture. Spoon ½ a tablespoon of maple syrup into each cavity and scatter 3 tablespoons of butter over the apples. This can be done up to 4 hours before baking and kept covered in the fridge until needed.
  6. Pour ½ cup of water into the pan with the apples and bake for 35 minutes.
  7. Add the reserved 2 tablespoons of sugar mixture, 2 tablespoons of maple syrup, 1 tablespoon of butter and ½ cup of water to the pan. 
  8. Bake for another 25 minutes or until the apples are tender when pierced with a skewer.
  9. Transfer the apples to 8 individual serving bowls.
  10. Place the baking pan on the stove and boil over a medium-high heat for about 2 minutes until the mixture becomes syrupy.
  11. Spoon the sauce over the apples and serve with double cream.
