Brown sugar and cinnamon apples

Ingredients
- 4 tbsp unsalted butter, cut into small pieces
- 1/2 cup brown sugar, packed
- 1 cup Double cream
- 6 tbsp maple syrup
- 1/4 tsp ground nutmeg
- 1 cinnamon stick
- 1 large golden delicious apples

Cooking Instructions
- Preheat the oven to 180°C.
- Peel the skin off the top quarter of each apple and using a melon baller, scoop out the core, leaving the bottom intact.
- Stand the apples upright in a 33 x 23 x 5 cm baking pan.
- Mix the sugar and spices in a bowl. Reserve 2 tablespoons of the mixture.
- Fill the apple cavities with the remaining sugar mixture. Spoon ½ a tablespoon of maple syrup into each cavity and scatter 3 tablespoons of butter over the apples. This can be done up to 4 hours before baking and kept covered in the fridge until needed.
- Pour ½ cup of water into the pan with the apples and bake for 35 minutes.
- Add the reserved 2 tablespoons of sugar mixture, 2 tablespoons of maple syrup, 1 tablespoon of butter and ½ cup of water to the pan.
- Bake for another 25 minutes or until the apples are tender when pierced with a skewer.
- Transfer the apples to 8 individual serving bowls.
- Place the baking pan on the stove and boil over a medium-high heat for about 2 minutes until the mixture becomes syrupy.
- Spoon the sauce over the apples and serve with double cream.
