Spicy crowd-friendly paella

Ingredients

  • 70 g sofritto tomato paste
  • 400 g chopped tomatoes
  • 400 g risotto rice
  • Chorizo, sliced
  • 1 tsp Saffron
  • 1 T smoked paprika
  • 1 tsp smoked chilli flakes
  • 1 tsp ground cumin
  • 4 garlic cloves, minced
  • 3 leeks, chopped
  • 1/2 cup olive oil

Cooking Instructions

This can be made over the gas or better still over medium coals.

  1. Heat the olive oil in a paella pan about 45 cm round. If you don't have one, make it in two pans and divide the ingredients.
  2. Add the leeks, cook for 5 minutes until soft and golden. 
  3. Add the garlic, spices and chorizo. Cook for 5 minutes stirring as it cooks.
  4. Add the rice and cook for one minute, making sure the grains are coated.
  5. Add the tomatoes, paste and chipotles. Bring to the simmer.
  6. Add in the hot stock and cook slowly for 20 minutes. Add more stock or hot water if you need.
  7. Layer over the seafood and cover with foil.
  8. Make sure it's a gentle heat and don't stir. Rather carefully push the rice to one side to see if not catching too much otherwise add some water all around the edges.
  9. When the season is pink and cooked, season with salt, scatter over the parsley and lemons. 
  10. Serve with warm ciabatta and a green salad.
