Devilled Eggs

Ingredients
- 12 eggs
- 4 tbsp mayonnaise
- 1 tbsp sweet chilli sauce
- 2 tbsp chives, finely chopped
- pinch cayenne pepper
- salt and pepper

Cooking Instructions
- Place the eggs into a pot, then cover with cold water.
- Place the pot onto the heat, then bring to the boil, and leave to boil for 5 minutes.
- Remove from the heat, then leave the eggs to sit in the hot water for another 5 minutes.
- Drain, then rinse the eggs under cold water to cool completely.
- Peel the eggs, then cut into halves and scoop out the yolk and place into a bowl, place the whites onto a serving platter.
- Mash the yolks, then mix in the mayonnaise, sweet chilli sauce, chives and cayenne, then season well.
- Spoon the mixture back into the egg whites, or place the mixture into a piping bag and pipe.
- Slice the bacon into lardons, then cook in a hot pan until crisp.
- Sprinkle the bacon bits over the eggs before serving.
