Steamed mussels with white wine

Ingredients

  • 1/2 medium onion, finely chopped
  • 4 cloves garlic cloves, finely chopped
  • 1 small fresh red chilli, finely chopped for serving
  • 2 kg fresh mussels, in their shells
  • 6 tbsp white wine
  • 1/2 fresh lemon leaves

Cooking Instructions

  1. In a large pot, fry the onion until soft then add the garlic and chilli and saute for a few seconds before adding the mussels, white wine and lemon juice.
  2. Cover and allow to cook for 10-15 minutes until all the mussels are open. (Discard any mussels that didn’t open during cooking.)
  3. Serve the mussels with fresh, crusty bread to mop up the juices.
