Vanilla rice pudding

Ingredients

  • 400g arborio rice
  • 1 vanilla pod, split and seeded
  • 3 Tbsp Butter
  • 2 Tbsp demerara or brown sugar
  • 500ml 1,5 L milk
  • 3 Tbsp strawberry or raspberry jam
  • dark chocolate, grated, to decorate
  • 85ml double cream

Cooking Instructions

  1. Saute the arborio rice, vanilla seeds and pod in the hot butter.
  2. Add the sugar and gently fry until it is melted and incorporated.
  3. Pour in the milk and bring the mixture to a slow simmer.
  4. Simmer for 20 minutes, stirring every 5 minutes, until the mixture is thick and smooth.
  5. Serve in bowls, topped with spoonfuls of jam, melted dark chocolate and double cream.
