Irish coffee is having a moment

Chef Clem’s version has vanilla-whipped cream

Ingredients

  • 2 cups of your favourite Woolies coffee (like Kenyan single origin 100% Arabica, single origin Costa Rican or Single origin Kilimanjaro)
  • 4 t brown sugar (more or less, depending on how sweet you’d prefer your drink)
  • 2 x 45 ml Jameson Irish Whiskey
  • ¼ cup whipping cream, chilled
  • ½ t vanilla paste

Cooking Instructions

  1. Prepare your coffee using a Moka pot or French press. Adjust the strength of the coffee by adding more or less coffee grounds.
  2. While your coffee is brewing, prepare your cream by adding chilled cream to a bowl and combining with the vanilla paste. Gently whisk, just until the foam is thick enough to coat a spoon when dipped into the cream. The cream still needs to be pourable. 
  3. Pour the coffee into a mug or heat-proof glass and stir in your desired amount of sugar. Add the whiskey and stir.
  4. Pour the vanilla-whipped cream over the back of a teaspoon or large spoon (this helps you to create 2 layers in the drink). Dust with cocoa if you like and serve immediately as an after-dinner drink or wintery cocktail.
