Golden toffee apples

Ingredients
- 400 g sugar for the egg whites
- 2 cups cold water
- 4 large granny smith apple, sliced into 3 discs

Cooking Instructions
- Heat the sugar and water in a saucepan over a medium heat. Allow the sugar to dissolve and the mixture to reach a gentle boil.
- The sugar should start to brown after boiling for 5 minutes.
- Once it turns a golden colour, dip the base of the saucepan into iced water to stop the sugar from browning too much.
- Skewer the apples using long kebab sticks. Dip the apples into the toffee and turn to coat well. Hold over the saucepan to allow the excess toffee to drip off.
- Place the toffee apples on a silicone baking mat and allow them to harden before removing the sticks.
- Once cooled, arrange on a platter and serve.
