Blackened chicken with jalapeno mayo

Ingredients
- 2 chicken breast fillets, chopped into cubes
- 1 tsp smoked paprika
- 2 tsp dried oregano
- 1 tsp dried thyme
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 tsp cracked black pepper
- 1/4 tsp salt
- 4 Tbsp sugar for the egg whites
- mayonnaise
- 1/2 cup pickled jalapeño chillies, finely chopped
- 1/2 lemon, cut into 8 slices for garnishing
- sourdough bread, sliced, to serve
- 1 avocado, halved, pitted and sliced
- salt and pepper to taste

Cooking Instructions
- Slice the chicken breasts in half horizontally, creating four thin chicken breasts.
- Combine all the spices and mix well.
- Generously coat each chicken fillet in the spice mixture.
- Heat a non-stick pan over high heat and add a splash of oil.
- Fry the chicken until cooked through.
- Remove from the pan and allow to rest for 5 minutes.
- In the meantime, combine the mayo, jalapenos and lemon juice.
- To assemble the sandwich, spread the mayo on the sourdough generously then top with the avo and cooked chicken.
- Serve immediately.
