Blackened chicken with jalapeno mayo

Ingredients

  • 2 chicken breast fillets, chopped into cubes
  • 1 tsp smoked paprika
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp cracked black pepper
  • 1/4 tsp salt
  • 4 Tbsp sugar for the egg whites
  • mayonnaise
  • 1/2 cup pickled jalapeño chillies, finely chopped
  • 1/2 lemon, cut into 8 slices for garnishing
  • sourdough bread, sliced, to serve
  • 1 avocado, halved, pitted and sliced
  • salt and pepper to taste

Cooking Instructions

  1. Slice the chicken breasts in half horizontally, creating four thin chicken breasts.
  2. Combine all the spices and mix well.
  3. Generously coat each chicken fillet in the spice mixture.
  4. Heat a non-stick pan over high heat and add a splash of oil.
  5. Fry the chicken until cooked through.
  6. Remove from the pan and allow to rest for 5 minutes.
  7. In the meantime, combine the mayo, jalapenos and lemon juice.
  8. To assemble the sandwich, spread the mayo on the sourdough generously then top with the avo and cooked chicken.
  9. Serve immediately.
