Crumbed chicken Parmesan in Tomato ragu

Ingredients
- 4 crumbed chicken breasts
- 80 g parmesan, finely grated
- 150g bocconcini cheese
- 100 g baby spinach
- 1 handful of torn basil
- 2 tbsp brown sugar
- 2 x 400 g Italian chopped tomatoes
- 200 g rosa tomatoes, chopped
- 1 tbsp rosemary, finely chopped
- 1 tbsp dried oregano
- 4 garlic cloves, finely chopped
- 1 red pepper, roughly chopped
- 1 red onion, chopped
- 4 tbsp extra virgin olive oil
- salt and pepper

Cooking Instructions
- For the ragu: heat the oil over a low heat. Cook the onions with seasoning until completely golden brown. This will take about 30 minutes but its important to slowly cook the onions.
- Once completely cooked down turn the heat up to medium and add the red peppers and garlic and cook until soft and caramelized. Add the herbs and tomatoes and stir together bringing to a simmer with the canned tomatoes and sugar.
- Allow the sauce to slowly cook on a low heat for 20 minutes, during this time pop the crumbed chicken in the oven to cook as per the instructions.
- After cooking the sauce for 20 minutes, taste before adding any extra seasoning then add the basil and spinach, allowing it to wilt in the sauce. Add the crispy crumbed chicken before sprinkling over the Parmesan and covering the chicken with the mozzarella before popping in the oven to finish cooking allowing the mozzarella to melt before serving with the garlic bread.
- Serve with Woolies all butter cheese filled baguette, prepared as instructed.
