Gourmet macaroni cheese

Ingredients

  • 2-4 rashers streaky bacon, parcooked
  • 225 g Butter
  • 30 g Flour
  • 275 ml fresh milk
  • 125 g cheddar cheese, grated
  • 250 g gluten-free penne
  • 1 1/2 cups Parmesan cheese

Cooking Instructions

 

  1. Preheat the oven to 180°C.
  2. Pan-fry the bacon until crisp and set aside.
  3. In a saucepan over a low heat, melt the butter then add the flour and mix to form a roux.
  4. Add a little warm milk and stir until smooth.
  5. Add the grated Cheddar and a cup of milk and cook gently, stirring continuously, until thick.
  6. Alternatively, use 400g of Woolies' ready-made cheese sauce.
  7. Cook the penne until al dente. Fold the sauce into cooked penne and spoon into a large ovenproof dish.
  8. Bear the bacon over the macaroni and grate over the Parmesan.
  9. Bake for 15 - 20 minutes, or until bubbling.


Cook's note: For a vegetarian option, leave out the bacon and add stir-fried, sliced button mushrooms instead.
