Cheesy deep-fried poppers

Ingredients
- 10 mild jalapeno chillies
- 50g mature cheddar, grated
- 2 tbls Parmesan cheese
- 300 g cream cheese
- sea salt and pepper to taste
- 1 large lemon, zested (optional)
- 90 g Flour
- 2 eggs
- 2 cups fresh breadcrumbs, for the coating
- oil for deep frying
- lemon wedges to serve

Cooking Instructions
- To prepare the jalapenos, make a slit lengthwise into each jalapeno (taking care not to cut right through, you want the jalapeno to remain intact) and with a spoon, carefully scrape out the seeds.
- In a bowl, combine the cheeses, salt, pepper and lemon zest and mix well.
- With a spoon, carefully stuff each jalapeno with the cheese mixture.
- Place the flour, eggs and breadcrumbs in separate bowls.
- In a saucepan/deep pan, heat the oil.
- To coat the jalapenos, cover them first in flour, then egg and finally in the breadcrumbs. You can repeat the egg and breadcrumb steps if you want extra crunch.
- Carefully place the jalapeno poppers in the hot oil and fry for approximately 5 minutes until they are golden brown and crispy.
- Remove from the oil and drain on kitchen towel. Allow to cool slightly.
- Serve with a generous squeeze of lemon juice.
