Minted courgettes

Ingredients
- 300 g halloumi cheese
- freshly ground black pepper
- 1 tsp Salt
- 2 tbsp chopped fresh mint
- 6-10 medium courgettes, halved

Cooking Instructions
- Drizzle a griddle pan with a little olive oil. Fry the courgettes on both sides until golden brown.
- Remove and lightly toss with mint and lemon juice.
- Season with salt and black pepper. Slice the halloumi cheese into strips and place on a warm fire.
- Cook quickly, turning once, then serve with the courgettes.
