Baked camembert

Ingredients

  • crackers, to serve
  • 50 g walnuts, coarsley chopped
  • 1 tsp fresh thyme
  • 1 tbsp vanilla paste
  • 1 cinnamon stick
  • 1 tbsp honey
  • 3 tbsp Verlaque fruit-infused balsamic reduction vinegar
  • 1 cup frozen mixed berries, defrosted
  • 1/2 onion, sliced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 125 g Camembert

Cooking Instructions

  1. Preheat oven to 180 °C.
  2. Unwrap the camembert and place it in a shallow ovenproof serving dish on a baking sheet.
  3. In a saucepan over a medium high heat, combine the butter and olive oil.
  4. Add the onion and sauté for 2 – 4 minutes or until it becomes translucent.
  5. Add the berries and continue to stir for an additional 1 – 2 minutes.
  6. Add the balsamic vinegar, honey, cinnamon stick, vanilla paste and thyme, stirring occasionally.
  7. Reduce the heat to low and simmer for about 10 – 12 minutes or until the liquid has reduced to a jam-like consistency.
  8. Remove from the heat and discard the cinnamon stick.
  9. Pour the chutney on top of the camembert and top with the chopped walnuts.
  10. Bake for 10 – 12 minutes.
  11. Serve immediately with crusty bread or crackers.
