Baked camembert

Ingredients
- crackers, to serve
- 50 g walnuts, coarsley chopped
- 1 tsp fresh thyme
- 1 tbsp vanilla paste
- 1 cinnamon stick
- 1 tbsp honey
- 3 tbsp Verlaque fruit-infused balsamic reduction vinegar
- 1 cup frozen mixed berries, defrosted
- 1/2 onion, sliced
- 1 tbsp olive oil
- 1 tbsp butter
- 125 g Camembert

Cooking Instructions
- Preheat oven to 180 °C.
- Unwrap the camembert and place it in a shallow ovenproof serving dish on a baking sheet.
- In a saucepan over a medium high heat, combine the butter and olive oil.
- Add the onion and sauté for 2 – 4 minutes or until it becomes translucent.
- Add the berries and continue to stir for an additional 1 – 2 minutes.
- Add the balsamic vinegar, honey, cinnamon stick, vanilla paste and thyme, stirring occasionally.
- Reduce the heat to low and simmer for about 10 – 12 minutes or until the liquid has reduced to a jam-like consistency.
- Remove from the heat and discard the cinnamon stick.
- Pour the chutney on top of the camembert and top with the chopped walnuts.
- Bake for 10 – 12 minutes.
- Serve immediately with crusty bread or crackers.
