Cauliflower spinach noodles with chicken

Ingredients

  • 250 g Woolworths spinach and cauliflower noodles
  • 2 tbsp olive oil
  • 1 garlic clove, crushed
  • pinch of chilli flakes
  • 2 chicken breasts, sliced thinly
  • 200 g exotic tomatoes, halved
  • 125 ml white wine
  • 1 tbsp sugar
  • 2 large tbsp creme fraiche
  • 2 tbsp chopped parsley
  • salt and pepper
  • 4 tbsp parmesan cheese, grated

Cooking Instructions

  1. Cook the noodles according to the packet instructions
  2. Place the olive oil, garlic and chilli into a large pan, then warm it up until it starts frying
  3. Add the chicken, then stir-fry to brown and cook on high heat
  4. Remove the chicken and set aside
  5. Fry the tomatoes until they start to burst 
  6. Deglaze the pan with wine
  7. Simmer over high heat to reduce.
  8. Stir in the sugar, crème fraiche and parsley 
  9. Season to taste and return the chicken to the pan
  10. Add the noodles and toss well to coat in the sauce
  11. Serve with a sprinkling of Parmesan cheese
