Cauliflower spinach noodles with chicken

Ingredients
- 250 g Woolworths spinach and cauliflower noodles
- 2 tbsp olive oil
- 1 garlic clove, crushed
- pinch of chilli flakes
- 2 chicken breasts, sliced thinly
- 200 g exotic tomatoes, halved
- 125 ml white wine
- 1 tbsp sugar
- 2 large tbsp creme fraiche
- 2 tbsp chopped parsley
- salt and pepper
- 4 tbsp parmesan cheese, grated

Cooking Instructions
- Cook the noodles according to the packet instructions
- Place the olive oil, garlic and chilli into a large pan, then warm it up until it starts frying
- Add the chicken, then stir-fry to brown and cook on high heat
- Remove the chicken and set aside
- Fry the tomatoes until they start to burst
- Deglaze the pan with wine
- Simmer over high heat to reduce.
- Stir in the sugar, crème fraiche and parsley
- Season to taste and return the chicken to the pan
- Add the noodles and toss well to coat in the sauce
- Serve with a sprinkling of Parmesan cheese
