- Frozen roasted Mexican-style corn
- grated cheddar cheese
- sour cream
- pickled jalapeno cones
- Sriracha mayonnaise
- Mexican-style chopped tomatoes
- enchilada spice mix
- pork mince

Cooking Instructions
- Lightly stir-fry the salmon in olive oil with enchilada spice, crushed garlic and smoked paprika until golden brown.
- Add 1 can of diced tomatoes with chilli and season, Simmer for 10 minutes.
- Serve with coriander, chopped spring onions, sriracha mayonnaise, pickled jalapeños, sour cream, sliced pineapple and pickled onions.
- To make the pink pickled onions, cut an onion into quarters and marinate in heated red wine vinegar for 15 minutes.
- Serve all of this on a chargrilled multigrain wrap with grated cheese, avocado, lime and frozen bean, and corn mix on the side.
