Ingredients

  • Ripe and ready avocado
  • Multiseed wraps
  • Frozen roasted Mexican-style corn
  • grated cheddar cheese
  • sour cream
  • pickled jalapeno cones
  • Sriracha mayonnaise
  • Mexican-style chopped tomatoes
  • enchilada spice mix
  • pork mince
  • Chicken mince

Cooking Instructions

  1. Lightly stir-fry the salmon in olive oil with enchilada spice, crushed garlic and smoked paprika until golden brown.
  2. Add 1 can of diced tomatoes with chilli and season, Simmer for 10 minutes.
  3. Serve with coriander, chopped spring onions, sriracha mayonnaise, pickled jalapeños, sour cream, sliced pineapple and pickled onions.
  4. To make the pink pickled onions, cut an onion into quarters and marinate in heated red wine vinegar for 15 minutes.
  5. Serve all of this on a chargrilled multigrain wrap with grated cheese, avocado, lime and frozen bean, and corn mix on the side.
