Easy shakshuka

Ingredients
- olive oil, for frying
- 1 x 190 g jar Woolworths shakshuka
- 2 x 400 g cans cherry tomatoes
- sea salt and freshly ground black pepper, to taste
- 200 g baby spinach
- 6 free-range eggs
- ciabatta, toasted, for serving

Cooking Instructions
METHOD:
- Preheat the oven to 180°C.
- Heat the olive oil in a deep frying pan over a medium heat. Add the shakshuka mix and stir.
- Add the tomatoes and season. Reduce heat to a simmer. Once the sauce has reduced slightly, create wells the sauce and divide 100 g spinach between the wells.
- Crack the eggs into the wells and place in the oven for 10-15 minutes or until the eggs are cooked to your liking.
- Meanwhile, sauté the remaining spinach. Serve the shakshuka warm from the oven, with the sautéed spinach and toasted ciabatta.
