Easy shakshuka

Ingredients

  • olive oil, for frying
  • 1 x 190 g jar Woolworths shakshuka
  • 2 x 400 g cans cherry tomatoes
  • sea salt and freshly ground black pepper, to taste
  • 200 g baby spinach
  • 6 free-range eggs
  • ciabatta, toasted, for serving

Cooking Instructions

METHOD:

  1. Preheat the oven to 180°C.
  2. Heat the olive oil in a deep frying pan over a medium heat. Add the shakshuka mix and stir. 
  3. Add the tomatoes and season. Reduce heat to a simmer. Once the sauce has reduced slightly, create wells the sauce and divide 100 g spinach between the wells. 
  4. Crack the eggs into the wells and place in the oven for 10-15 minutes or until the eggs are cooked to your liking. 
  5. Meanwhile, sauté the remaining spinach. Serve the shakshuka warm from the oven, with the sautéed spinach and toasted ciabatta.
