French toast with blueberries and bacon

Ingredients

  • 1 French baguette, sliced horizontally
  • 8 extra-large free-range eggs
  • 300 ml full cream milk
  • butter, for frying
  • 200 g fresh blueberries
  • 6 Tbsp Castor sugar
  • lemon juice

Cooking Instructions

  1. Pre-heat a non-stick frying pan over medium heat.
  2. Whisk together the eggs and milk then soak the slices of bread in the mixture.
  3. Fry the French toast in a knob of butter until golden brown and cooked through on both sides.
  4. In the meantime, combine the blueberries, sugar and lemon juice in a small saucepan and allow to cook over high heat for 5-7 minutes until the blueberries have become syrupy and have released their juices.
  5. Serve the French toast with the blueberries and bacon.
