French toast with strawberries

Fresh strawberries add a tangy surprise to this breakfast favourite

Ingredients

  • 8 Free-range eggs, beaten
  • 1 vanilla pod, split and seeds scraped out
  • 4 Tbsp sugar for the egg whites
  • 4 Tbsp canola oil, plus extra for greasing
  • 4 slices sourdough bread, sliced, to serve
  • 400 g strawberries, chopped
  • 3 tsp rose water
  • 4 Tbsp water
  • 330 g Castor sugar
  • icing sugar, for dusting

Cooking Instructions

  1. Beat the eggs with the vanilla seeds and sugar. 
  2. Heat the canola oil in a nonstick pan over a medium heat. Soak the bread in the egg for 2 minutes, then fry the egg-soaked bread for 3 minutes on each side.
  3. Slice the strawberries and mix with therose-water, water and caster sugar. Steep for5 minutes, then spoon over the French toast.
  4. Dust with icing sugar before serving.
