Raspberry & ricotta whip

Ingredients

  • 1/2 cup ricotta cheese, to serve
  • 200 ml Greek yoghurt
  • mango
  • 12 granadillas,pulp removed
  • fresh raspberries
  • 1/2 cup plus 2 tbsp sugar for the egg whites

Cooking Instructions

  1. Mix the ricotta cheese and Greek yoghurt, then set aside.
  2. Peel and chop the mango and divide between four glasses.
  3. Spoon the pulp the granadillas on top of the mango, followed by the ricotta-and-yoghurt mixture.
  4. Blend the raspberries with the sugar and spoon over the tops.
