Fresh blueberry chocolate truffles

Serves:makes 6 to 10 truffles

Ingredients

  • 100 g 70% dark chocolate,melted
  • 50g unsalted butter, cold and cut into small cubes
  • 250 ml Double cream
  • 45 ml cocoa powder
  • 1/2 cup toasted desiccated coconut
  • 1x125 g punnet blueberries, halved

Cooking Instructions

  1. Gently heat the chocolate, butter and cream until smooth.
  2. Cool in the refrigerator until it starts to set.
  3. Place a little chocolate and a few blueberries in your hand and roll gently.
  4. Toss the chocolate-berry ball in the cocoa powder and roll in the coconut.
  5. To decorate, melt a little chocolate with a drop of water over a gentle heat.
  6. Drizzle over the truffles.
