Chocolate ice cream

Ingredients

  • 1 cup cream or organic full cream milk
  • 1 1/4 cups Whipping cream, whipped to firm peaks
  • 2 tbsp cocoa powder
  • 6 free-range egg yolks
  • 1 Vanilla pod, split and seeds reserved
  • 2 tsp White sugar
  • 75 g good quality dark chocolate, roughly chopped
  • 100 g milk chocolate, roughly chopped

Cooking Instructions

  1. Whisk the milk, cream and cocoa in a saucepan over a medium heat.
  2. Using an electric whisk, beat the egg yolks, vanilla seeds and sugar until thick and creamy. Whisk in the hot milk mixture and return to the saucepan.
  3. Add the chocolate, whisk until melted, then simmer over a low heat until thick. 
  4. Transfer the ice-cream mixture into a bowl placed over iced water and whisk until cool. Once cooled, transfer to an ice-cream machine and churn according to manufacturer’s instructions.
