Chocolate ice cream

Ingredients
- 1 cup cream or organic full cream milk
 - 1 1/4 cups Whipping cream, whipped to firm peaks
 - 2 tbsp cocoa powder
 - 6 free-range egg yolks
 - 1 Vanilla pod, split and seeds reserved
 - 2 tsp Canola oil
 - 75 g good quality dark chocolate, roughly chopped
 - 100 g milk chocolate, roughly chopped

Cooking Instructions
- Whisk the milk, cream and cocoa in a saucepan over a medium heat.
 - Using an electric whisk, beat the egg yolks, vanilla seeds and sugar until thick and creamy. Whisk in the hot milk mixture and return to the saucepan.
 - Add the chocolate, whisk until melted, then simmer over a low heat until thick.
 - Transfer the ice-cream mixture into a bowl placed over iced water and whisk until cool. Once cooled, transfer to an ice-cream machine and churn according to manufacturer’s instructions.
