Cooking Instructions
- Add 1 tablespoon of vegetable oil and half the content of the Hot & Sour Paste jar to a medium-sized saucepan.
- Turn the heat to medium-low and bring the ingredients to a gentle simmer.
- Add 400 ml coconut milk and bring to a gentle simmer.
- Add a shallot or 1 small brown onion, roughly chopped and 150 g of exotic mushrooms, slicing the shiitake and King Oyster mushroom and breaking the Shimeji into individual mushrooms.
- Add 100 g of Rosa tomatoes, sliced lengthwise. Simmer for 5 minutes.
- If desired, season to taste with a teaspoon of fish sauce.
- To serve: divide into 2 - 4 bowls & garnish with fresh coriander, sliced spring onion and lime. For an extra kick of heat, add freshly chopped chilli.
