Roasted Teriyaki Aubergine

    Cooking Instructions

    1. Preheat oven to 220 °C. 
    2. Half and score 2 medium-sized aubergines, drizzle with oil and season with salt and white pepper. Place scored side down on a roasting dish or baking tray and roast for 15 minutes. 
    3. Remove from the oven and reduce heat to 200 °C. 
    4. Turn over the aubergines and brush the scored side with approximately half the jar of Woolworths Teriyaki sauce using a basting brush. Return to oven for 15 minutes.  
    5. Brush with a final layer of Woolworths teriyaki sauce, approximately 1 tablespoon before serving. Serve as a side dish or as an appetizer.  
    6. Alternatively serve as a vegetarian meal, on a bed of rice and sprinkle with sesame seeds, sliced spring onion and fresh coriander. Drizzle with Sesame Sauce for a nutty and creamy finish.
