Coconut banana with ice cream & syrup

Ingredients
- 4 large, split lengthways banana
- 90 g Flour
- 2 whisked extra large free range eggs
- 3 cups desiccated coconut + extra for sprinkling
- 3 Tbsp vegetable oil
- 2 tsp white sugar
- 1/2 cup plus 5 tsp cold water
- 2 halved stalks of lemon grass
- 2 tsp fresh lime, juiced

Cooking Instructions
- To make the syrup, combine all the ingredients in a saucepan and allow to simmer until reduced and syrupy in consistency.
- To make the coconut bananas, heat the oil in a medium-sized saucepan.
- Place the flour, eggs and coconut in three separate bowls.
- Dip the banana quarters first in flour, then in egg and finally in coconut.
- When the oil is hot, carefully add the bananas and allow to fry until golden brown and crunchy.
- Remove the bananas from the oil and allow to drain on kitchen paper.
- Serve the fried bananas with a scoop of vanilla ice cream, drizzled with lemon grass syrup.
To Serve:
Woolworths Vanilla ice cream.
