Snoek paella
Ingredients
- 2 x 80 g Woolworths hand shelled fresh peas
- 400 g lightly smoked snoek, roughly flaked and bones removed
- 500 ml tomato puree
- salt and freshly ground black pepper, to taste
- 2 tbsp ground cumin
- 2 tbsp ground coriander
- 2 tsp paprika
- 2 tsp smoked paprika
- 3 tbsp tomato paste
- 15 g parsley, roughly chopped
- fresh coriander, roughly chopped
- 1 red chilli
- 4 garlic cloves
- water as needed
- 1 cup risotto rice
- 1 red onions, roughly chopped
- 4 tbsp extra virgin olive oil

Cooking Instructions
- Heat the oil over a medium heat before browning the onions.
- While the onions are browning prepare the sauce by blending all the ingredients together in a blender until smooth.
- Add the rice to the onions and toast for a minute before pouring over the sauce. Bring the rice to a simmer before reducing the heat to low and covering with a lid to cook for about 20 minutes or until the rice is almost tender, adding a little water at a time if needed.
- Before the rice is completely cooked, add the flaked snoek and peas, stir through and allow to cook through and heat.
- Serve with extra parsley and a lemon wedge on the side.
