Snoek paella

Ingredients

  • 2 x 80 g Woolworths hand shelled fresh peas
  • 400 g lightly smoked snoek, roughly flaked and bones removed
  • 500 ml tomato puree
  • salt and freshly ground black pepper, to taste
  • 2 tbsp ground cumin
  • 2 tbsp ground coriander
  • 2 tsp paprika
  • 2 tsp smoked paprika
  • 3 tbsp tomato paste
  • 15 g parsley, roughly chopped
  • fresh coriander, roughly chopped
  • 1 red chilli
  • 4 garlic cloves
  • water as needed
  • 1 cup risotto rice
  • 1 red onions, roughly chopped
  • 4 tbsp extra virgin olive oil

Cooking Instructions

  1. Heat the oil over a medium heat before browning the onions.
  2. While the onions are browning prepare the sauce by blending all the ingredients together in a blender until smooth.
  3. Add the rice to the onions and toast for a minute before pouring over the sauce. Bring the rice to a simmer before reducing the heat to low and covering with a lid to cook for about 20 minutes or until the rice is almost tender, adding a little water at a time if needed.
  4. Before the rice is completely cooked, add the flaked snoek and peas, stir through and allow to cook through and heat.
  5. Serve with extra parsley and a lemon wedge on the side.
