Chicken chow mein

Ingredients

  • 4 chicken breast, on the bone
  • 3 tbsp canola oil
  • 1 red onion, cut into thin petals
  • 4 garlic cloves, finely grated
  • 6 cm ginger, grated
  • 1 red chilli, finely chopped
  • 1 red pepper, cut into strips
  • 3 carrots, julienned
  • 1/4 head red cabbage
  • 4 spring onions, cut into chunks
  • 100 g cashews, toasted
  • 4 tbsp coriander, chopped
  • 1/2 cup soy sauce
  • 1/4 cup bbq sauce
  • 1/4 tomato sauce
  • 1/4 cup water

Cooking Instructions

  1. Remove the chicken from the bone before cutting into large chunks and setting aside.
  2. On a clean chopping board: Begin arranging the vegetables as well as nuts ready for the wok. Combine all the ingredients for the sauce and set aside.
  3. Heat the oil over a high heat. Add the chicken and let it sit for 30 seconds before begin to stir fry it in the wok by simply moving it around. Remove the cooked chicken.
  4. Add the onions to the wok and stir for 30 seconds before beginning to layer the rest of the ingredients. Add the garlic, ginger, chilli, peppers, carrots, cabbage and spring onions while continuing to move the ingredients around the wok swiftly.
  5. Return the chicken to the wok along with the sauce, toss to coat all the ingredients then add the noodles and toss through. 
  6. Add the cashews and coriander while giving the dish a final toss and serve piping hot.
