Ingredients
- 3 tbsp olive oil
- 1 onion, roughly chopped
- 2 garlic cloves, finely grated
- 2 cauliflower, small head, cut into florets
- 1/4 cup water
- 50 - 60 g parmesan, grated
- salt and freshly ground black pepper, to taste
- parsley, to garnish
- 500 g organic spelt fusilli
- 50 g parmessan, grated

Cooking Instructions
- Heat the olive oil over a medium heat before adding the onion and garlic. Cook slowly allowing the onions to soften and slightly caramelise.
- Add the cauliflower florets along with a little water, just enough to create some steam. Slowly simmer with the lid on until the cauliflower becomes tender, and breaks apart easily.
- Add the parmesan to the cooked cauliflower and blend together until smooth using a hand blender. Season with salt and freshly ground black pepper to taste.
- Stir the sauce through the cooked pasta and top with the crisp Parmesan sprinkle.
For the crisp Parmesan sprinkle
- Heat a non stick pan over a medium heat. Add small mounds of the cheese to the pan allowing it to melt. Once the ends begin to brown remove it from the pan and let it cool to set and harden.
- Break into small pieces before sprinkling over the pasta.
