Nectarine tarte tatin

Ingredients

  • 9 nectarine
  • 3 tbsp muscovado sugar
  • 3 tbsp butter, and an extra 2 tablespoon for dotting
  • 1 vanilla pods
  • 2 sheets woolworths all butter puff pastry
  • 1 crème fraiche
  • 4 tbsp icing sugar
  • 1 vanilla pod

Cooking Instructions

  1. Halve the nectarines and remove the stones. Heat the sugar and butter together over a medium heat along with ½ cup of water.
  2. Allow the mixture to melt together before adding the nectarines, cut side town. Let the water reduce before almost gone then add the extra butter, dotting it over the nectarines. Cover with the sheets of pastry before placing in the oven to bake for 20-25 minutes at 180.
  3. Once golden and puffed, remove from the oven and cover with a plate. Carefully turn the plate over to reveal the cooked nectarines.
  4. Serve with scoops of the mascarpone vanilla cream.
